Calling chocolate cake













Last night I rifled through my recipe (note)book looking for the best chocolate cake; I wanted to make cupcakes.  They turned out OK but not "best ever".  Me asking for the best chocolate cake recipe is like the cobbler's kids having no shoes but I'm asking.  And, I'm looking for recipes with all the good ingredients in them (you know -- butter, eggs, sugar, etc.).  Thanks!

Martha Stewawrt's one bowl chocolate cake recipe (http://www.marthastewart.com/recipe/one-bowl-chocolate-cake?autonomy_kw=) (along with her simple butter cream frosting) is my idea of a perfect chocolate cake.

(And it's easy to clean up afterwards!)

the BEST chocolate cake resides in costco!!

why make one from scratch when it will just fall short of the best:) the costco store-bought best...

This is the yummiest chocolate cake I've ever tasted (rivaled only by the Costco one allegra mentioned). It's even better layered with mousse! Try it!

BEST CHOCOLATE CAKE EVER

2 c. sugar
2 c. flour
small pkg. chocolate pudding
3/4 c. baking cocoa
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt
2 eggs
1 c. whole milk
1/2 c. oil
2 tsp. vanilla
3/4 c. boiling water

Grease and flour cake pan(s). Combine all dry ingredients. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Add boiling water and mix well. Pour into pans. Bake at 350˚ for 30 to 35 minutes (20-25 minutes for cupcakes). Cool cake 10 minutes and remove from pans. Cool completely.

Frosting:
6 Tbsp. butter or margarine
1/2 c. baking cocoa
2 2/3 c. powdered sugar
1/3 c. milk
1 tsp. vanilla

This one always turns out good for me. I think the buttermilk makes it so moist.

Chocolate Cake
2 cups flour
2 cups sugar
1 teaspoon soda
1 teaspoon vanilla
1 teaspoon salt
1/2 teaspoon baking powder
3/4 cup water
3 Tablespoon cocoa
3/4 milk or buttermilk
1/2 cup shorting
2 eggs
Mix dry ingredients and set a side
Mix wet ingredients well and add dry ingredients a little at a time until all incorporated. Bake 350* in two layer pans for 40 45 minutes. Cool completely before icing.

The Barefoot Contessa has a really yummy chocolate cake recipe-she swears by adding coffe to her recipe. It is supposed to enhance the chocolate. I have not tried it, but I have baked many other things of hers and have not been disapointed by any of them. But I am also for the Costco cake-so yummy.

Just a side note, if you like butter cream frosting and use it on your cake-I found that the best is half butter and half crisco, but you probably knew that.

We love this cake recipe, but it's not completely from scratch. This is Quinn's absolute favorite chocolate cake, very moist. Hope you have a chance to try it.

Chocolate Sour Cream Cake

1 pkg devil's food cake mix
1 small pkg instant chocolate pudding
4 eggs beaten
3/4 cup water
3/4 cup sour cream
1/2 cup oil
1 cup semi sweet chocolate chips

Beat together first 6 ingredients, stir in chocolate chips. Bake in bundt pan at 350 degrees for 55-60 minutes. Allow to cool, cover with a milk chocolate ganache. Also great if you serve it with whipped cream or ice cream.

2-1/2 c flour
2/3 c unsweetened baking cocoa
1 T bking soda
1/4 tsp salt
(sift dry stuff)
1 stick butter, room temp
(cream)
1-2/3 c sugar
(cream)
5 large eggs
(add to creamed mix)
1 tsp vanilla (add)
1-1/3 c buttermilk
ADD flour mix to egg mix alternately w/buttermilk and beat smooth.
Pour batter into 2 9-inch pans lined w/wax paper and greased/floured.
Bake ~30 mins at 350 F.
Cool on wire racks 10 mins.
Remove from pans, cool completely.

Frost w/your favorite choc frosting and YUM-O!!

I think your former neighborly neighbor's mom's chocolate cake recipe is the best I've ever had--though I've never tried it as cupcakes.

Beet-Chocolate Cake (that's right)

2 cups sugar
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup oil
3 to 4 ounces unsweetened chocolate
4 eggs (now we're talkin')
3 cups shredded beets (seriously)

Combine dry ingredients. Melt chocolate very slowly over low heat or in a double boiler. Allow chocolate to cool, then blend thoroughly with eggs and oil. Combine flour mixture with chocolate mixture, alternating with the beets. Pour into 2 greased 9-inch cake pans. Bake at 325 for 40-50 mins, or until fork can be removed from the center cleanly. Serves 10.
